Serving Suggestion: Glenkinchie 12 is fantastic with fish! The character of Glenkinchie – light, slightly dry, smoky with spice – makes it good with raw and spicy fish. Sashimi and sushi, scallops in bacon, tempura prawns. It’s just perfect, too, with a simple madeleine or Parmigiano Reggiano. APPEARANCE Bright gold. BODY Light, smooth. NOSE Very aromatic and flowery overall, like breathing in a country garden. Noticeable vanilla, cut flowers (daffodil, blossom and hints of lily) and beneath these, a clean, toasty note. Becomes increasingly sweet and creamy, with a lightly aromatic edge and fresh citrus, which all brings to mind lemon cheesecake. Water makes it still more creamy and scented. PALATE A sweet soft start, like crême anglaise, soon becoming flowery again. A really smooth delivery, especially after adding a drop of water. The mid-palate is crisp and then the flavour settles into a tightly focused bundle of butter icing, lemon cheesecake and freesias. FINISH Herbal and drying
The fruit of Dalmore's experiments with casks from around the world, this port wood reserve marries Dalmore's weighty whisky with thick port-cask fruit and spice. Matured first in American white oak bourbon casks, it is then finished in port pipes from W&J Graham before being bottled at a punch 46.5%. Creamy and fruity with controlled sweetness. Balvenie DoubleWood is, to not much surprise, aged in two kinds of oak casks! It was firstly matured in refill American oak casks before it was treated to a finish in first fill European oak Oloroso sherry butts for an additional nine months. The expression was launched in 1993, and has become a somewhat iconic whisky over the years. Even at 12 years old, this rich and complex dram is an excellent example of what the Balvenie distillery can craft. Aroma Supple nuttiness intertwined with spices. Honeyed sultanas and grapes. Taste Sweet with good body. The bourbon characters develop; gentle spice with a little vanilla, a hint of balancing peat lurking quietly in the substrata. Dried fruit too, combining with nuts, nutmeg, cinnamon, back into the bourbon notes. Finish Spicy, slightly drying, still sweet.
DOUBLE CASK The Macallan Double Cask 18 Years Old, a perfectly balanced single malt whisky matured for 18 years in both American and European sherry seasoned oak casks. Sherry seasoned American oak adds delicate vanilla to the subtle spice of European oak, delivering a whisky with a sweeter, warmer taste and character. COLOUR Amber honey. NOSE Dried fruit, ginger and toffee. Rich orange with hints of clove and nutmeg. PALATE Rich raisin and sultana with notes of caramel, vanilla and ginger, balanced by wood spice and zesty citrus. FINISH Warm oak spice with ginger, turning to sweet orange.

Singleton 12 is a simple Speyside single malt Scotch whisky. It has a nutty, malty taste with a hint of fresh fruit scents. The aging process of Singleton 12 plays a vital role in shaping these flavors. The whisky matures for 12 years in oak casks, which imparts depth and richness to its taste. This long maturation period ensures that each bottle of Singleton 12 is a promise of quality and refined taste. Nose Malty with cereal/ barley sweetness, buttery toast, wood shavings, hay and walnut. A fresh and appetising nose, with little or no trace of smoke. A little water raises almond oil and old fashioned oilskins; still a fresh fruitiness, a trace of olive oil, and after a while potpourri or scented hand-soap. PALATE Drinks well at natural strength; sweet start; pleasant, light fragrant smokiness and a lengthy finish. Smooth, pleasant mouth-feel; with water light acidity, some salt and still the sweeter notes. A complex balance of primary tastes. FINISH Sweet smokiness in the lingering, slightly sour finish.

Miyagikyo malts are described as elegant and fruity. Made from light peated and non-peated malted barley, whiskies distilled in pot stills heated by indirect steam express a signature fruitiness and delicate mouthfeel. This no-age-statement version was released in 2016 as a permanent product that showcases the elegant style of Miyagikyo malts. This bottling has estery aromas generated by carefully selected yeast strains along with distinctive Sherry cask influence. Nose Full-flavoured, rich. Concentrated iris notes, then develops aromas of malted barley, exotic fruit (banana), liquorice and camphor. Notes of burnt wood and ash, white flowers and beeswax make an appearance.
